I beat the guy using an archery General with 1 veteran shielded spearman, 1 level 5 crossbowman, 2 veteran fire archers and 1 lancer cavalry.
The cavalry was the important piece. I switched a hospitaller for the cavalry. You use the cavalry to keep the enemy pushed back and it worked.
Also want to mention that the General had the Knights Templar badge (for going on a pilgrimage) which improves morale at the start of battle. You might need this as morale was the big issue with this battle.
